Just blitz the following together:
1 cup of nuts (I used 1/2 cup each of roasted peanuts & almonds)
1 cup of rolled oats
1/2 cup coconut
1 cup of dried pitted dates, soaked in 1/2 cup of boiling water for 10-15 minutes. Adding soaking liquid to mixture as well.
Blitz until a sticky dough forms. Don't worry if the mixture still seems a little wet once it's mixed..just leave it for a few minutes & the oats will soak it all up.
Roll into balls and coat in desiccated coconut. Pop in the fridge or freezer in an airtight container. Enjoy xx
