Always creative, Renae from @the_wholesome_nutritionist made this amazing rocky road protein slab one Sunday morning for her boyfriend (sorry fellas, she's taken)... but you don't have to be as selfless as her! Make this and keep it all to yourself before the seagulls in your life come squawking!
2/3 cup Wildbag Raw Superfood Protein - Organic Cacao
3 tbs peanut butter (could use other nut butter or coconut oil if preferred)
2 tbs coconut flour
2 tbs rice malt syrup (alternatives: honey or maple syrup), you can add more or less sweetner as per your individual preference
Handful each of cranberries, pepitas & coconut flakes
1/4-1/2 cup of water
In a medium sized bowl, mix together all the ingredients except the water.
Add 1/4 cup of water to dry ingredients and mix well, adding more water gradually until desired consistency is reached.
Note: the coconut flour and protein powder will soak up the water so once the desired consistency is reached let the mixture sit for a couple more minutes, check it again and add more water if its a little dry/crumbly. You want the mixture to be a thick dough consistency (not runny) but not too dry.
Line a small square or rectangle container with non-stick baking paper. Place mixture into lined container, pressing mixture down firmly with the back of a spoon to even it our. Top with some extra nuts, cranberries, seeds etc. pressing them gently down into the mixture and pop in the fridge/freezer to set. Slice into 6-8 squares. Enjoy.
