Looking for a sweet yet tangy treat that’s also healthy? We’ve got you covered. This delicious lemon and coconut protein slice has been our go-to lately, and as an added bonus, it doesn't require baking. Because no-one wants to be dealing with a hot oven when it's already as hot as an oven outside!
1/2 cup melted coconut oil
3/4 cup unsweetened shredded coconut
2 tbsp honey
2 tbsp lemon juice + zest to taste (we suggest about 1/3 of a lemon)
2 tbsp coconut flour
Mix all ingredients together
Line a small baking tray with baking paper and spread mixture evenly through the tray.
Sprinkle some extra shredded coconut over the top.
Pop in the fridge for one hour.
Cut into even slices and enjoy poolside - protein slice in one hand and a cold, refreshing drink in the other.
