Another amazing recipe from our good friend and dietitian / health coach Renae from @the_wholesome_nutritionist - she really is incredible at making these bad boys!
These are great to throw in the kids' lunchboxes, or to snack on yourself between meals or after work/school. A healthy and guilt free indulgence! Just try not to eat them all at once, I dare you!
2 scoops of Wildbag Raw Superfood Protein - Organic Cacao
1 cup nuts (I used 1/2 roasted peanuts & 1/2 almonds but other nuts work well too)
1 cup of pitted dates, soaked for 10 minutes in 1/4 cup boiling water (reserve any left over soaking water).
1/4 cup of desiccated coconut
1 heaped Tbsp of raw cacao (optional: gives them a rich chocolatey taste).
1/3 cup of crushed peanuts (for rolling)
In a food processor - blitz the nuts up until fine crumb, then add remaining ingredients & blitz until sticky dough forms. If needed add small amounts of the reserved water (from the soaked dates) to the mixture, blitzing each time, until dough like consistency. Roll mixture into small balls and then press into crushed peanuts to coat.
Easy as that!
